Sarah Willingham-Toxvaerd
CEO & Founder
Sarah is a highly experienced entrepreneur and investor in the hospitality industry, with notable roles at Planet Hollywood and Pizza Express. She has appeared on BBC’s ‘Dragon’s Den’ and ‘The Restaurant’, showcasing her expertise as a judge and investor. Sarah’s accomplishments include co-owning and selling the Bombay Bicycle Club, developing The Real Greek and Tootsies brands, and holding influential positions such as chairing the Tonkotsu Group and being a shareholder in ‘Craft Gin Club’. In 2020 Sarah founded Nightcap and has grown the business from 1 to 11 brands in three years, recently awarded ‘Best Leader of the year’ at the 2023 Publican Awards.

Dawn Donohoe
Group Managing Director
Dawn is a highly experienced operator with over 20 years experience of senior leadership in the hospitality sector. With major roles across London and the UK, Dawn was an original senior team member at Urbium/Novus that launched its expansion across the West End and subsequent UK rollout, moving through to Operations Director of Enhanced Hospitality, a food and entertainment led business. Dawn joined Nightcap, in June 2021, as Managing Director of the the London Cocktail Club and shortly stepped up to Managing Director of the entire Nightcap estate. With an unmatched track record in the late-night sector and a passion for people, Dawn is a leader and friend to us all here.

Head of Sales
Craig started his hospitality career at Compass Group working with venues from The Jockey Club Racecourses to The O2, and then moving on to Late Night London at Novus Leisure. Craig has head up the sales departments for Maxwell’s Group and our recently acquired Dirty Martini. Having worked with 200 plus venues throughout his career to date, Craig has incredible experience in launching brands, delivering events and managing top talent like our UK Sales Team.
